Fast Easter cake without yeast
A quick Easter cake without yeast is a biscuit made from biscuit dough with raisins and spices. Despite the lack of yeast, Easter cake will turn out to be quite high, and most importantly - incredibly tasty. The yeast in this recipe is replaced by soda, vinegar, baking powder and egg white whipped in strong foam. This combination of ingredients allows you to quickly prepare Easter baked goods. Easter cake is small, the ingredients are indicated for the shape of 11-12 centimeters, you can bake in a metal or in a special paper Easter mold. Proportionally increase the number of foods for more servings.

Ingredients for Easter cake without yeast
- 130 g of wheat flour;
- 5 g of ginger powder;
- 35 g of raisins;
- 1 egg
- 25 g butter;
- 100 g of sugar;
- 50 ml of milk;
- ⅓ teaspoon of baking powder;
- ¼ teaspoon of soda;
- 1 teaspoon apple cider vinegar;
- a pinch of salt, vanillin.
To decorate:
- icing sugar, milk, glazed chocolate pills.
A method of preparing a quick Easter cake without yeast
Melt the butter, pour vanilla on the tip of the knife, a pinch of fine salt and granulated sugar.

Break the egg into a separate bowl, separate the protein from the yolk. Add egg yolk to butter and sugar, set aside protein, it will be needed in this Easter cake recipe later.
Beat the ingredients with a mixer for several minutes until sugar crystals are completely dissolved.
Add milk or cream. You can use fermented milk products - kefir, yogurt, liquid sour cream. In the case of using fermented milk products, apple cider vinegar is not needed!
Beat the liquid ingredients with a mixer. Mix wheat flour with baking powder, soda and ginger powder. Sift the mixture into a bowl of liquid ingredients.

Scald raisins with boiling water, spread on a napkin, dried. If the raisins are large, cut smaller. Add the prepared raisins to the dough, at this stage of the Easter cake recipe we also add a teaspoon of apple cider vinegar, mix thoroughly.
Separately, beat the egg white into a strong foam, you can add a little powdered sugar at the end of the beat. Add whipped protein to the dough.
Very carefully, in a uniform circular motion, mix the dough with whipped protein.
Lubricate the form with butter, sprinkle with flour, spread the dough. It should fill out a form for 2/3 of the volume. Paper Easter molds do not need to be oiled.

We send the cake to the oven warmed up to 180 degrees Celsius. Bake for 25-30 minutes. We check the readiness with a wooden skewer - if it comes out dry from the middle, then you can get the cake from the oven.

Pour two tablespoons of powdered sugar into a bowl, add two teaspoons of milk or cream, grind the mass until a thick, viscous glaze is obtained. We pour hot cake with icing, and immediately, until the icing has frozen, we decorate with multi-colored glazed chocolate dragees. By the way, you can use M&M with peanuts, it will be fun, bright and tasty.
