Roll “Herring under a fur coat” with herring homemade salting

Herring under a fur coat is firmly entrenched in the festive menu of many generations. My friend, who left far and long ago, during her short visits to her historical homeland, orders only herring under a fur coat with brown bread, not looking at what her taste preferences would consider too simple. I propose to diversify our classic salad with herring of homemade salting, and turn the “coat” itself into a roll, which will not only save space in the refrigerator before the holiday, but also allow you to make some variety in the setting of the festive table.

Homemade salted herring is cooked very quickly, but before it can be used to prepare snacks, at least 3 days must pass.

Ingredients for Herring under a fur coat roll with homemade salted herring

For salting herring:

  • 2 large herrings;
  • 4 teaspoons of salt with a slide;
  • 2 teaspoons of sugar;
  • 1 tablespoon of apple cider vinegar;
  • bay leaf, cloves, pepper.

For roll:

  • 2 herring fillets;
  • 3 medium potatoes;
  • 3 carrots;
  • 3 small beets;
  • 1 onion;
  • mayonnaise, greens.

A method of preparing a roll of "Herring under a fur coat" with herring homemade salting

Pickle herring. We select a large herring without signs of "rust." For marinade, you need coarse salt, sugar, apple or grape vinegar, several leaves of laurel, 6-7 peas of black pepper and several cloves.

We make a deep incision on the belly of the herring, get the insides, remove the skin, cut off the head, remove the ridge. We put washed fillet, caviar and milk in a jar.

We make the marinade. In a small amount of boiling water, dissolve salt, sugar, add spices. Bring the marinade to a boil, remove from heat, pour apple or grape vinegar. Pour the herring with the cooled marinade. The marinade must be cold, otherwise the fish will boil, its flesh will become loose! We remove the salted herring in the refrigerator for three days.

After 3-4 days, the herring “ripens”, you can cook from it a classic and beloved herring under a fur coat, and to diversify the appearance of a traditional snack, we roll it into a roll. It is very simple to do this, you only need a roll of cling film.

All other products for a herring under a fur coat, I think it is not necessary to list. Just in case, maybe someone forgot - beets, carrots and potatoes, boiled in their uniforms, onions and mayonnaise.

Many people add boiled eggs or mashed garlic to the herring, here, as they say, "everyone has their own taste, someone likes watermelon, and someone pork cartilage." To make the salad completely homemade, you can also make mayonnaise with your own hands.

Take a fine grater, grind all the vegetables. Rub onions finely so that the onion slices do not interfere with chopping the roll into thin portions.

We put on a film layer in turn - beets, carrots and potatoes. Then we put the herring of the home ambassador, add the grated onion. Layers of vegetables need a little salt so that the salad is not fresh.

We turn the herring under a fur coat into a dense roll, remove it for several hours in the refrigerator.

Ready-made roll “Herring under a fur coat” holds its shape well and cuts perfectly. You can pour it with mayonnaise or chop and serve beautiful slices of roll with a portion of sauce for each guest separately.
